Red Lentil Mash

Do you love mashed potatoes as I do but can't have the carbohydrates? Try this recipe I call "Red Lentil Mash" and you will miss them no more!

You will need a mill to grind up lentils and make lentil flour. I use a Mockmill which attaches to a KitchenAid mixer. There are many other manual and electric mills available in addition to the Mockmill.

Combine sour cream, butter or margarine and cultured buttermilk to make a thick cream. Heat the mixture and little by little add red lentil flour, stirring with a fork, until it is the consistency of mashed potatoes. If you have a hand (immersion) blender, you can use it to make the consistency smoother. Voila!

 Add butter/margarine, sour cream, salt, pepper, chives, scallions, bacon bits to taste. You will be the only person on your block eating pinkish/orangeish mashed lentils and you will think you are eating mashed potatoes!
